Instructions

  1. Bloom The Gelatin: Pour 1/2 cup of the juice into a liquid measuring cup or small bowl and sprinkle the gelatin powder over it. Stir gently to combine and set aside for about 5 minutes until the gelatin thickens and looks very thick and grainy.
  2. Heat The Remaining Juice: While the gelatin blooms, pour the remaining 3 1/2 cups of juice into a medium saucepan and heat over medium-high heat until steaming hot but not boiling or simmering.
  3. Melt The Bloomed Gelatin: Add the honey or sweetener (if using) along with the bloomed gelatin into the hot juice and stir thoroughly until the gelatin dissolves completely, ensuring a smooth mixture.
  4. Set: Pour the gelatin mixture into a 2-quart ceramic pan or heatproof containers. Cover with plastic wrap and chill in the refrigerator for at least 3-4 hours until fully set.
  5. Serve & Store: Once set, enjoy the jello immediately or store it refrigerated. For optimal texture and flavor, consume within 4-5 days, although it can last up to 7-10 days before breaking down.
