  • 1 tortilla
  • 2 tablespoons hummus
  • 2 ounces deli turkey
  • 1 leaf romaine lettuce
  • 3-4 slices cucumber
  • 3-4 cherry tomatoes
  • 5-6 strips red onion
  • 3-4 kalamata olives
  • 3-4 banana pepper rings
  • 2 tablespoons feta cheese crumbles
  • 1.5 tablespoons Greek vinaigrette


Instructions

  1. Prepare the lettuce: Chop the romaine lettuce leaf into thin shreds or use pre-packaged shredded lettuce to save time.
  2. Prepare the vegetables: Quarter cherry tomatoes. Thinly slice cucumber and then cut the slices into quarters to create small triangular pieces. Thinly slice the red onion into strips.
  3. Slice olives and peppers: Slice 3-4 kalamata olives and chop 3-4 banana pepper rings into smaller pieces.
  4. Toss the veggie mixture: In a small bowl, combine chopped lettuce, tomatoes, cucumber, red onion, olives, and banana peppers. Add 2 tablespoons of feta cheese crumbles and drizzle with 1.5 tablespoons of Greek vinaigrette. Toss everything gently to combine and set aside.
  5. Assemble the wrap: Lay the tortilla flat and spread 2 tablespoons of hummus evenly over it.
  6. Add turkey: Layer 2 ounces of deli turkey in the center of the tortilla on top of the hummus to make rolling easier.
  7. Add the veggie mixture: Evenly scoop the prepared veggie and feta mixture over the turkey, keeping it centered on the tortilla.
  8. Roll and serve: Roll the tortilla tightly around the filling and cut it in half to serve.
