Scale
Soup Base
- 4 tablespoons butter
- 1 medium onion (finely chopped)
- 1.5 pounds cremini mushrooms (sliced)
- 2 tablespoons flour
- 1 tablespoon Hungarian paprika
Liquids & Seasoning
- 3 cups chicken broth
- 1 cup milk
- 1 tablespoon Tamari sauce
Finishing Ingredients
- ½ cup sour cream
- 1 tablespoon lemon juice
- 3 tablespoons fresh parsley (chopped)
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon fresh thyme (chopped)
- Salt (to taste)
- Black pepper (to taste)
- Ground chili pepper (to taste)
Instructions
- Prepare the Base: In a large pot over medium heat, melt the butter. Add the finely chopped onion and cook for about 3 to 4 minutes until soft and translucent.
- Cook Mushrooms: Add the sliced cremini mushrooms to the pot and sauté for 7 to 8 minutes, stirring occasionally, until they release their moisture and turn golden brown.
- Add Flour and Paprika: Sprinkle the flour and Hungarian paprika over the mushrooms. Stir thoroughly to coat everything evenly and cook for an additional 1 to 2 minutes to remove the raw flour taste.
- Add Liquids and Simmer: Gradually pour in the chicken broth while stirring continuously to prevent lumps. Add the milk and Tamari sauce next, mixing well to combine. Bring the soup to a gentle simmer and cook for 10 minutes, stirring occasionally.
- Finish the Soup: Remove the pot from heat. Stir in the sour cream, lemon juice, fresh parsley, dill, thyme, salt, black pepper, and ground chili pepper until smooth and well combined.
- Serve: Let the soup rest for a couple of minutes, then serve garnished with additional fresh herbs if desired. Enjoy with crusty bread or a light salad.
Notes
- This soup is a perfect cozy one-pot dish ideal for cold-weather seasons and holiday starters like Thanksgiving and Christmas Eve.
- You can substitute cremini mushrooms with bella or portobello mushrooms for a different texture.
- For a vegetarian version, replace chicken broth with vegetable broth and use a vegetarian Tamari or soy sauce.
- Adjust the amount of chili pepper to your heat preference, or omit it for a milder flavor.
- Serve with crusty bread or a simple green salad for a complete meal.
