Description

Creamy Hungarian Mushroom Soup is a comforting, flavorful soup made with caramelized onions, browned cremini mushrooms, toasted Hungarian paprika, and a luscious sour cream finish. Enhanced with fresh herbs like dill, parsley, and thyme, this soup is perfect for chilly days and holiday gatherings.

Ingredients

Scale

Soup Base

  • 4 tablespoons butter
  • 1 medium onion (finely chopped)
  • 1.5 pounds cremini mushrooms (sliced)
  • 2 tablespoons flour
  • 1 tablespoon Hungarian paprika

Liquids & Seasoning

  • 3 cups chicken broth
  • 1 cup milk
  • 1 tablespoon Tamari sauce

Finishing Ingredients

  • ½ cup sour cream
  • 1 tablespoon lemon juice
  • 3 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt (to taste)
  • Black pepper (to taste)
  • Ground chili pepper (to taste)

Instructions

  1. Prepare the Base: In a large pot over medium heat, melt the butter. Add the finely chopped onion and cook for about 3 to 4 minutes until soft and translucent.
  2. Cook Mushrooms: Add the sliced cremini mushrooms to the pot and sauté for 7 to 8 minutes, stirring occasionally, until they release their moisture and turn golden brown.
  3. Add Flour and Paprika: Sprinkle the flour and Hungarian paprika over the mushrooms. Stir thoroughly to coat everything evenly and cook for an additional 1 to 2 minutes to remove the raw flour taste.
  4. Add Liquids and Simmer: Gradually pour in the chicken broth while stirring continuously to prevent lumps. Add the milk and Tamari sauce next, mixing well to combine. Bring the soup to a gentle simmer and cook for 10 minutes, stirring occasionally.
  5. Finish the Soup: Remove the pot from heat. Stir in the sour cream, lemon juice, fresh parsley, dill, thyme, salt, black pepper, and ground chili pepper until smooth and well combined.
  6. Serve: Let the soup rest for a couple of minutes, then serve garnished with additional fresh herbs if desired. Enjoy with crusty bread or a light salad.

Notes

  • This soup is a perfect cozy one-pot dish ideal for cold-weather seasons and holiday starters like Thanksgiving and Christmas Eve.
  • You can substitute cremini mushrooms with bella or portobello mushrooms for a different texture.
  • For a vegetarian version, replace chicken broth with vegetable broth and use a vegetarian Tamari or soy sauce.
  • Adjust the amount of chili pepper to your heat preference, or omit it for a milder flavor.
  • Serve with crusty bread or a simple green salad for a complete meal.
