Instructions
- Cook the eggs: Hard-cook the 6 large eggs using your preferred method such as stovetop boiling or Instant Pot. Once cooked, allow them to cool enough to handle safely.
- Peel and halve: Carefully peel the cooled eggs and slice each one lengthwise in half, creating 12 egg white halves.
- Prepare the filling: Scoop the yolks into a bowl and mash them thoroughly with 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon freshly squeezed lemon juice, and ½ large ripe avocado. Mix until smooth and season with salt and pepper to taste.
- Fill the eggs: Using a piping bag or spoon, pipe the yolk mixture back into the egg white halves, forming tall swirls that resemble Christmas trees.
- Add festive toppings: Sprinkle crushed red pepper flakes or place small red pepper pieces or pomegranate seeds on the filling as ornaments.
- Create stars: Use a 1-inch star-shaped cookie cutter to cut 12 stars from the yellow bell pepper. Place one star at the top of each egg tree to complete the festive look.
