Instructions
- Preheat and Prepare Baking Dish: Preheat oven to 350°F and grease a 9x13 inch baking dish with cooking spray.
- Cook Sausage: In a large skillet over medium heat, brown and crumble the sausage until fully cooked and browned.
- Make Gravy: Sprinkle the flour over the cooked sausage, stir well, and cook for 1 minute. Slowly add the 3 1/4 cups milk while stirring constantly until the mixture is smooth and thickened. - Scramble Eggs: In a large microwave-safe bowl, whisk together the eggs, 1/4 cup milk, and diced red pepper. Pour the egg mixture into a hot skillet and scramble until fully cooked.
- Prepare Biscuits: Open the tube of biscuits and cut each biscuit into 8 pieces. Arrange the biscuit pieces evenly on the bottom of the prepared baking dish.
- Assemble Casserole: Layer the scrambled eggs evenly over the biscuit pieces, pour the sausage gravy mixture on top of the eggs, then sprinkle the shredded cheddar cheese evenly over the casserole.
- Bake Covered: Cover the baking dish and bake in the preheated oven for 20 minutes.
- Bake Uncovered: Remove the cover and bake for an additional 20 minutes or until the biscuits are cooked through and the top is golden and bubbly.
